Tasty Tuesdays - Blueberry Good Stuff

Good Morning World! Mr. Arkansas here with another Tasty Tuesday! This one is a desert, and it is GOOD. This recipe comes from Momma Arkansas, she has been making this as long as I have been around. This makes a great summertime recipe, because it is chilled to perfection! Here we go, Blueberry Goodstuff!
 
You will need: 1 Stick of Butter
  • 1 c. Flour
  • 8 oz. Cream Cheese
  • 1 Small container Cool Whip
  • 1.5 c. powdered sugar
  • 1 c. sugar
  • 2 tablespoons cornstartch
  • 1 c. water
  • 1 tablespoon lemon juice.
  • 3-4 cups of fresh or frozen blueberries
  • 1-2 Bananas 

Step one, the Crust:
 
Mix 1 stick softened butter with 1c. flour. Mix together until crumbly, now press this into the bottom of an 8"x8" baking dish. Bake at 350 until it starts to brown. Once starting to brown, set aside and let cool. 
 
 
 
Step two, Blueberry:
 
In a 2qt. sauce pan, mix the following: 1c. sugar, 2tbl. cornstartch, 1c. water, 1tbl. lemon juice, 3-4c. blueberries. Mix all of the ingredients over a medium-low flame, stirring occasionally.
 

Let the entire mixture simmer until the sauce turns clear... well as clear as blueberry sauce can be.
                                                     
Step three, Goodstuff:

Soften the cream cheese, then beat with a mixer for a couple minutes. Slowly sprinkle in the powdered sugar as you continue to beat the cream cheese.

Next, using a rubber spatula, fold in the container of cool whip. Cover and refridgerate... for about a hour.
 
By now your blueberry mixture should be done, let that set aside and cool down. You want everything to be cold before mixing together. We wanted it done quicker so we sat it in the sink with some ice... although if you feel that you can wait... the refrigerater would have worked just fine.


Step four, Nanners:

Simply slice up the banana across the crust.

Step five, Compose:

Put in all of the cream cheese/coolwhip mixture, spread evenly around on top of the bananas and crust. Now pour all of the blueberry mixture over the mix!  
 

Let this set in the fridge for an hour or so and you are ready to enjoy Blueberry Goodstuff. I hope you all enjoy!
