Tagliatelle with Lemon

Life without pasta?

Perish the thought... at least for this recipe. 

This is in no way a diet food, or a food that should be eaten everyday. But once a month. Yes once a month is perfect. You see this is one of two dishes that Mr. Arkansas and I always cook together and its always special. Its one of his favorite meals I make and actually his first favorite I ever whipped up.... so yes it has a special place in our hearts. After the crappy news about pugs eye, a 10 mile bike ride and much needed crying on my part, Last Saturday we made "Tagliatelle with Lemon".


Ingredients:

12 ounces tagliatelle (or you favorite pasta)
4 lemons
1 T EVOO
6 ounces of creme fraiche (found near the dairy or cheeses)
6 ounces parmesan cheese
Salt & Pepper
Shrimp or Chicken (optional, this time we added shrimp)

Boil Pasta until done. Then while your pasta is cooking grate and zest all of the lemons. Be sure to save the juice of one or two. In a sauce pan heat the EVOO and Lemon zest on low for 2 min. Add the cream fraiche and bring to a boil. Add in the reserved lemon juice. When the cream starts to thicken add about 4 ounces of the parmesan cheese to taste. I always save a little extra for "topping". Add the drained pasta to sauce pan and mix well. Serve immediately.
