Mozzarella Salad with Sun-Dried Tomato Dressing

This is the FIRST salad recipe I have posted on this site, so there's a reason for it. This is one of the BEST Salads I have ever eaten so of course I had to dish it (pun intended).


Psst: Try and ignore that delicious halibut in cream parsley sauce that's next to the salad. Mr. Arkansas will be back tomorrow with that recipe.

For the Dressing:
5 oz Sun Dried Tomatos in olive oil
1/4 C Basil
1/4 C Parsley
1 TBS Balsamic Vinegar
2 Cloves Fresh Garlic
Pepper

Put the sun-dried tomatos, basil, parsley, vinegar, and garlic in a food processor until blended well - I like it similar to pesto. Add 2/3 cup of oil from the sun dried tomatos or you can add extra virgin olive oil. Process until smooth.

In addition to the dressing you will need:

Lettuce
Croutons
Fresh Mozzarella

Divide your lettuce into bowls (I used mixed greens), top with croutons, the dressing and fresh sliced mozzarella... delish!
