Peanut Butter Heaven in 5 minutes

These yummy frozen treats are not only super easy to make they are to date Mr. Arkansas favorite snack needless to say, its hard to keep them around. So last week when he asked "Why haven't you posted these awesome nuggets?" I didn't have an answer - I just made another batch then snapped some photos and here we are...



Ingredients:

• 1 cup Crisp Rice cereal
• 1/4 cup smooth all-natural peanut butter
• 3 tbsp Raw Honey
• 1/2 tsp pure vanilla extract
• 1 tsp cocoa powder (Optional)

Directions: Line a plate (I use a pie dish) with parchment paper. In a medium sized bowl spoon in the peanut butter, honey and vanilla extract. Microwave on high for 35-45 seconds and Stir well (if you are adding the cocoa add it now). Immediately, stir in the rice crisp cereal until all rice crispies are coated. At this point you can decide if you want bars or balls most of the time I opt for balls for their ease.

For Balls: Wet hands thoroughly and shape the mixture into ‘golf-balls’. Press mixture together firmly into balls so it will hold. Wet hands after each ball is formed so the mixture will not stick to your hands. Place the balls onto parchment paper and freeze for 5 minutes. We keep ours in the freezer in a sealed container.

For Squares: Line a small square dish with parchment paper, dump the mixture into the dish. Wet hands thoroughly and Press mixture firmly down, Freeze for 15 minutes, cut them into squares – store them in the freezer.


Makes 6 golf-ball sized chews or 6 squares

Nutritional info: (per ball, makes 6 balls): 112 cals, 6 grams fat, 14 grams carbs, 10 grams sugar, 3 grams protein.

  1. These look fabulous! Have you tried adding in melted marshmallow to make them more like the original treats? Marshmallow + p.butter = yumminess (I think!)

  3. These sound yummy, and pretty simple. My go-to dessert that's always in my house is brownies, homemade of course. So simple and my husband dies over them.
