Campfire Meals

We've been taking advantage of our fantastic weather the past couple of weeks by cooking outside. We started with the usual outdoor go-to meals: burgers, hotdogs and fried pies. What fried pies aren't your go-to? 

After going through the usuals we eventually got a little more creative. Which brings me to today, I've been itching to share with you some of our new found favorites. Finally, (After a couple of weeks) I have the photos & recipes in the same place. 



Usually I like to save the best for last but in this case this is the BEST and it's first. I'm feeling a little froggy sue me. 

This is  the world that is: CORNELL BARBECUED CHICKEN

It looks so good I could lick the screen.  

I wish I could take credit - but we were not the inventors of this amazing recipe, the folks at Cornell University are. After creating it, they gave it to the boy scouts who gave it to us in a cookbook.

The most unique (and tastiest) part of the recipe is there is no 'traditional' bbq sauce the brine is the crisp-sauceless-flavor that will have you tapping your foot. Or something like that.

Next up: 


These are so very easy yet delicious you'll want seconds or thirds.  

Per serving: Dice up one potato, 1/2 an onion, 2 cloves chopped garlic and 1 tbs olive oil.  Wrap up in foil and toss onto the coals (see first photo, bottom right). Bake on the coals for about 25 min or until your desired crispness.

Then, devour.

Last but not least one of my favorite Mr. Arkansas recipes: 

Rosemary Ranch Kabobs. 


I love rosemary on just about anything so Mr. A hit the nail on the head with these puppies, they are juicy, creamy, crispy nuggets of deliciousness.  We've been making them for years but just recently we rediscovered our old favorite.     And we cook our potatoes like that too! Even when I cook out on the grill - I make them that way!
    So...want to try you other recipes though!

  4. I love cooking on a campfire! We built a fire pit a couple years ago and now Tristan is old enough that we can use it more and I don't worry (too much) about him getting to close and getting burnt. Something about food made over a campfire is just so much better. I'll be making some good use of these recipes soon. Thanks for sharing.
